The defines roof slope parameter allows you to toggle which parts of your roof are inclined. After you sketch walls and a roof for your design sketch another roof that you want to join to the original roof.

Sketch mode is used to allow you to define the boundary of your roof. Move the walls to the dormer. Revit then makes the wall meet the underside of the roof correctly. Roof by footprint can be used for both flat and sloped pitched roofs.
